Signature Stuffing: Cumberland sausage meat from Sloanes, apples, sage, and dried cranberries for sweetness.
Sweet Cure Bacon: Covering the crown in bacon ensures that the mean is really juicy – not like the dry turkey so many families suffer on during Christmas day. We use Sweet Cure so that the turkey doesn’t become too salty, and because the sugar in the cure caramelises during cooking to give a lovely golden glow.
Garnish: The Pavilions Phuket garnish the turkey with a slice of orange and lemon and a sprig of rosemary rather than bay leaves. This imparts a better flavour during cooking and emphasises the fact The Pavilions Phuket prepare the Turkey by hand, by flavouring the meat during cooking and ensuring it looks visually striking.
Animal welfare is central to the sourcing policy at The Pavilions Phuket, so we have sourced fresh organic and local Turkeys, which are free of hormones or antibiotics and gracefully free to roam in Khao Yai by Khlong Phai farms.
