Aharā, a term from ancient Ayurvedic philosophy defining food as the foundation of well-being, is more than simply a restaurant, but an experience. on November 2023, this 30-seater restaurant opened on Keong Saik Road's old eating district with intimacy without pretence. The restaurant's new à la carte menu, led by one of India's top Asian cuisine chefs, offers contemporary variations on street food and classics as well as a unique look at lesser-known Indian dishes.

Chef Vikramjit Roy, 43, is credited for pioneering modern Asian cuisine in India. Over 20 years, he has worked with The Oberoi Group, Taj Hotels, and ITC Hotels. Under ITC Hotels, he created and ran Pan Asian in Chennai and Tian in New Delhi. His international experience includes five years as Masaharu Morimoto's protégé in Japan and stints in Heston Blumenthal's R&D team and Hong Kong's three-Michelin-starred Bo Innovation.

He has created a modern menu at Aharā that showcases the diversity of Indian food cultures. This creates a rich, unassuming sense of overlapping regionalities from many lifetimes. From Kolkata's puchkas to Mumbai's vada pav, Kerala's appams to Punjab's sarson ka saag, Aharā explores India's diverse cuisine.
