Temper ticks many boxes but does so without ever veering into gimmickery, resulting in something quite exquisite that is challenging to categorise. It effortlessly combines a wine room, food crafted by Michelin-starred talent and a cocktail lounge, all set to carefully curated music in a sumptuous decor. Attention to detail is everything here, resulting in a truly delightful and novel experience for the senses.
Walking into Temper, I was struck by the decor that harmoniously blends modern sophistication with edgy accents—think arched frames, warm colours, lush textures and intriguing, attention-catching lighting, creating an inviting, refined aesthetic that sparks curiosity and intimacy rather than overwhelm. The space is a visual feast, carefully curated to evoke a sense of intimate luxury infused with playful elegance.
The team behind Temper is a masterclass in culinary and beverage artistry. Master Sommelier Roberto Duran, formerly Head Sommelier at 67 Pall Mall, brings his keen palate and charismatic flair to the wine programme, elevating the experience to one of refined discovery with over 2000 wines to indulge in.
The open kitchen is helmed by Executive Chef Nicolas Tam, chef-owner of the Michelin-starred Willow and an alumni of Joël Robuchon, Zen, and Esora, and Head Chef Ronald Sim, whose approach to food is shaped by Michelin-starred stints at Burnt Ends and Candlenut.
Their menu beautifully balances innovation with soul. From indulging in caviar and the freshest oysters from Normandy and Brittany to the oozy comfort of the french dip sandwich (of which I had more than I care to admit such was the moorishness of this seemingly humble dish), there is a depth and genuineness to each dish.
Down the Insta-worthy staircase awaits the cocktail lounge and beating heart of Temper, with live musicians or DJs setting the vibes to match the atmosphere. The music, expertly curated by Joshua Pillai (formerly Head of Programming & Music at CE LA VI, KU DE TA & Mandala Club), is an integral part of the Temper experience, ensuring that our ears get treated to the same indulgence as our eyes and taste buds.
The cocktail bar, led by South Korean consulting bartender June Baek, stirs up an exciting array of sips, with signature ones paying tribute to Duxton Hill’s history. My personal fave was the Jinrikisha, blending tequila, pineapple, sesame and togarashi spice.
Temper is not merely a restaurant; it’s a sensorial voyage that surprises, delights, and comforts whilst doling out vibes in spades. Whether settling in for a wine-paired dinner or indulging at the cocktail lounge, every moment here is a celebration of meticulous craftsmanship and bold, inventive spirit.
