Ash & Elm’s Nordic Sunday Champagne Brunch Has Arrived

Chef Eric Neo, Singapore’s first Nordic-Asia Culinary Ambassador appointed in 2018 launches a Sunday Champagne Brunch featuring Nordic cuisine at Intercontinental Singapore's Ash & Elm

The brunch spread is inspired by the culinary philosophy from the wintery Northern Europe regions, emphasizing locality and tradition.

Highlights from the menu include not just classic Nordic dishes but also the finest produce flown in exclusively from Iceland, Sweden, Finland and Norway as a result of collaborations between the food and culinary institutions of these regions.

A selection of Nordic Cheeses from Andre Farm, Jukolan Juusto and Farm House include the Andre Grand, Andre Excellent, Aito Cheddar, Brie de Meaux, Fourme D'ambert, Comte with Crackers, Lavosh, Fruit Paste and Dried Fruits.

The wood fired pizza at Ash & Elm features a Blood Sausage & Cheese Pizza selection and the Seafood extravaganza entices guests to sample free-flow Chilled Tiger Prawns, Black Mussels, Boston Lobster, Clams, Whelks, Scallop, Finnish Crayfish, Sweden Oysters on Ice all available with with accompanying Condiments and Sauces.

“The Nordic region is renowned for its fresh locally grown ingredients and preservation techniques. However, Nordic cuisine is still relatively unknown in Singapore – to date we have not seen many products nor dishes from the likes of Finland and Iceland, served on our tables or sold in stores. I believe more can be done to bring awareness to this exquisite cuisine, and enhance food diversity in Singapore at the same time”, says Chef Eric, who is also the President of Singapore Chef Association.

The Caviar & Roe display takes this brunch to an indulgent level offering Queen Kaluga Caviar, Ikura, Avruga, Wasabi Tobiko, Ebiko with Condiments and Blinis.

Expect a showcase of crowd favorites at Ash & Elm such as creamy langoustine soup, pan-seared Norwegian salmon with lemon-herb and butter sauce, and succulent beef wellington. Something, literally for every taste and every Palate

Those with a sweet tooth will not be disappointed by the variety of desserts such as Rhubarb Cake, Summer Berries Pie and Lingonberry Cream Brulee. Complement brunch with a handcrafted gin cocktail, Aurora, inspired by the Northern lights. Concocted using Metsis Gin, specially imported from Estonia for the brunch, it is available for top-up at $15 nett per glass.

The experience is further elevated with unlimited luscious caviar, premium seafood on ice, succulent roasts and Taittinger Brut Champagne.

Anyone that knows me, knows I love a good Champagne brunch and having sampled most of the island’s impressive offerings in this space, I am always excited when a new concept comes to town.

This time we ventured to the timeless, colonial inspired hotel, The Intercontinental where Ash & Elm serves up its Classic Weekend Brunch with Seafood & Caviar. Offering the brunch on both a Saturday and Sunday is a welcome feature especially for those parents amongst us.

Stepping into Ash & Elm, the dark woods and earthy tones are symbolic of burning wood-fire and glowing embers – it presents itself as a proper dining destination with charcuterie and cheese rooms and even a pizza oven. A step above the often bland hotel restaurants.

Our group of 8 decides to embark on the elevated brunch experience, which will feature fine seafood, caviar, gourmet cheese and signature meats from the Charcoal Grill served with unlimited Tattinger Brut champagne. I am fortunate enough to have visited the Tattinger champagne house twice and it is one of my favourite premium champagnes – a subtle blend offering a light, elegant and balanced champagne which is a perfect match for an afternoon brunch.

The style of brunch here is shared platters – so all menu items are presented on the table. However, customisations can easily be made for dietary restrictions (all items are clearly labelled according to dietary needs) and extra items can also be ordered if you so desire. We were impressed when one of our diners had a dietary issue that we had not informed them about in advance and an entire separate platter came out just for her.

Our appetizers included a charcuterie selection, bakery selection, cheeses and grilled shrimps with chilli and chives. Being a huge truffle fan, my favourite was the Truffle Egg Mayo Baguette and I also adored the Compressed Watermelon, Crab, Celery, Guacamole bite.

Champagne brunch for me is all about seafood (and champagne of course!) so the highlight of my afternoon was the Seafood & Caviar – a generous platter brimming with oysters, scallops, Alaskan king crab, Boston lobster and Kaluga Queen Caviar – a luxurious treat indeed!

The next course was immensely popular with the group – Truffle Poached Eggs with Chives and Virginia Ham and Grated Cheese Toast, one guest could not get his hands on enough of those moreish cheese toasties.

Onto the mains and you can select your preferred protein from a fine array of gourmet choices including Spanish Pork, French Yellow Chicken, Beef Short Ribs or the Ocean Catch of the Day – easily something to please everyone.

You would be well advised to leave a little space for dessert as the divine looking platter of sweet morsels is hard to resist – a range of classics including red velvet cake, apple tartin, chocolate brownie, cheesecake, macarons and pralines – enough to send any sweet tooth to heaven and back.

Wholly satisfied and in a champagne induced joyful mood we all agreed this was a stellar addition to the Singapore champagne brunch scene – combining the quality of the offering with the on point service, up-scale ambience and excellent price point we will be sure to recommend this to our fellow brunch revellers.

If you want to try a different Champagne brunch, then Ash & Elm located at Intercontinental Singapore has a little bit of a twist to the normal Sunday brunches.

This incarnation : the Nordic Theme" is only available until Sunday 17 November so It’s not to be missed.

We’ve all been to countless brunches and to tell the truth they are very similar, but this was a pleasant surprise and a really nice change from the same old, same old...

A Nordic theme is full of comfort, feel-good food from several Nordic regions. Hearty casseroles, cabbage, meatballs and don’t forget the mashed potato.... that won me over.

The mashed potato was... amazing, if you are European and miss your spuds this is a must, you must try for yourself - words are not enough!

They also had an enormous array of fresh seafood and a delightful and indulgent...caviar station.

What I liked about the presentation of the food was there wasn’t load of different stations.

Two main dishes beef wellington and a cod dish, which were divine and then lots of smaller dishes. More quality over quantity.

The dessert section was stunning, I didn’t want to eat anything because they all looked so pretty, but I forced myself!

Mini chocolate cakes, choux buns, rich chocolate cake, berry cheesecake, the list is endless.

For those with a sweet tooth you will be in heaven.

Be warned about the Estonian gin (yes they make gin and it makes a fine cocktail!) who knew!

But it’s not for the faint hearted, very strong but deceivingly easy to drink.

It was the little touches like the autumnal flowers and herbs, displayed around the room that gave it that cosy feel without being too over the top.

The staff were excellent and very friendly, extremely attentive. And then there was the DJ. very understated throughout the brunch and as the TAITTINGER champagne flowed towards the end as the DJ knocked out some banging tunes. We all just wanted to stay and dance the afternoon away. A great way to end a brunch. full marks and congratulations to the team at Ash & Elm.

We will be booking for the next Sunday Brunch incarnation which is your Christmas spread come November 24 I was told..... looking forward to visiting again....

Introducing the Nordic Sunday Champagne Brunch Ash & Elm located in InterContinental Singapore. At $ 148++ per adult this is a wallet-friendly price for the excellent array of food and drinks which includes Tattinger, cocktails, house wines, beers.

The kids' menu is great for the little ones at $48 ++ per child. This very handsome Beef Wellington (pictured) has your name written all over it - for the next few sundays at least. In fact, this new Sunday Free-Flow will entertain guests for a LIMITED season including Sunday Oct 20, Oct 27, Nov 3,10 and final serving on Sunday 17 November before the Grand Christmas Buffet takes over. Did a staycation over the weekend to celebrate a birthday. One word to sum up the service “impeccable”.

I don't want to give you an 8/8 because I want you to continue to strive for greatness and never sit back and think you have the top service in Singapore.

It's great service but always room for that little bit of improvement.

It began with the receptionist who recalled and addressed me by my name the following day, to the room service staff who literally raced up to my room after I called down to make sure we had plenty of ice for the drinks.

The dining service staff at Ash & Elm restaurant who made sure we had everything we wanted at the Sunday brunch were really friendly and informative.

It’s services like these, attention to detail, that made our stay at the Bugis Intercontinental Singapore a wonderful experience. Thank you. we will certainly be spreading the word.
