Joining in the buzz of the upcoming Singapore Night Race, InterContinental Singapore is kicking off the race season with an exclusive three nights only, Thursday 29 Sept - Sat 1 Oct, 2022 four-hands collaborative dinner with Singapore-based Chef de Cuisine Davide Giacomelli of LUCE by Davide Giacomelli and Guest Chef Nelly Robinson of famed nel. restaurant in Australia.

The restaurant's first, Chef de Cuisine Davide Giacomelli of LUCE who has held stints at multiple Michelin-starred restaurants across Europe, and Chef Nelly Robinson, Australia's international award-winning top chef personality, Chef Patron and owner of the celebrated nel. restaurant will join forces to curate a stunning six-course menu that highlights each of their own unique culinary flair – Chef Davide who is known for his refined simplicity; and Chef Nelly’s reputation for creating fascinating degustation that is sure to impress.

Diners will begin their evening with the Tartare di Wagyu Alla Carbonara, a bite-sized hors d’oeuvre consisting of Diced Wagyu Beef Tartare, Carbonara Espuma and Crispy Guanciale. Officially kicking off the meal, guests will be served the Sotto il Mare by Chef Nelly, a refreshing appetiser of Poached Crab, designed to look like a rockpool. The delicate spanner crab is cooked at 64 degrees, precisely for 10 minutes and cleverly paired with Macadamia, Mint and Sea Bubbles for a refreshing flavour profile.

The perfect entryway into the first main dish of the evening - Farro, Gamberi Imperiali e Pesto Verde by Chef Davide - a unique risotto-like dish which uses Farro slow-cooked in King Prawn Stock, further elevated with homemade Pesto, resulting in a light herby flavour with hints of savoury richness from the cheeses and pine nuts used in Chef Davide’s specialty pesto. This delightful dish is then topped with plump roasted king prawns.

For the main event, guests will relish two dishes that are sure to leave a lasting memory. First up would be Chef Nelly’s Spezia Del Mare, Kingfish tandoori flamed with smoked yogurt and lobster – a dish inspired by Chef Nelly’s favourite childhood memory of the UK where he used to devour endless servings of tandoori chicken with his parents. The vivid memory of the smoky flavours, he now recreates with the delectable Kingfish.

Marinating it for 48 hours in tandoori spice, he smokes the Kingfish together with yogurt and serves it with puffed lobster crumbs. This is followed by Chef Davide’s Manzo Maturato, Ostriche, Funghi e Salicornia, Dry-Aged Wagyu Beef cooked in red wine reduction in oyster and borage dressing topped with glasswort, raw mushrooms – a delicacy that goes perfectly with a glass of plush, full-bodied Head Red Shiraz Vintage 2020.

To conclude the evening, guests will enjoy a show stopping dessert of delectable peppermint and chocolate forest, also known as Foresta di Singapore by Chef Nelly – a sweet ending inspired by his visit to the garden city as a child, where he was blown away by the vast woodlands and greenery.
