Known as being one of the best destinations in Singapore for fine-dining, Riviera has now diversified its offerings for diners by housing two unique concepts at its stunning location overlooking Singapore’s iconic Merlion and Marina Bay waterfront: The Lounge at Riviera and Riviera The Restaurant.
In addition to the Mediterranean fine-dining magic that Riviera has been so well-known for, Riviera has now carved out a stylish and relaxed lounge area, The Lounge at Riviera, which serves up casual Mediterranean fare ideal for sharing, as well as beautiful competitively-priced Business Lunch Sets (2-course for $48++ and 3-course for $58++).
The innovative new menu for The Lounge at Riviera is conceptualized by the star-studded pairing of Executive Chef Rémy Carmignani and Executive Pastry Chef Nicolas Vergnole, who boast a combined 30-plus years of experience working in some of the most acclaimed Michelinstarred restaurants in the world, including Guy Savoy, La Dame de Pic and Odette, just to name a few.

The menu takes diners on a gastronomic tour across the sun-drenched coasts of the Mediterranean peninsula, from Italy, Southern France, Greece and Spain, all the way to exotic Morocco. Guests are encouraged to create their own stunning spread of Mediterranean dishes – accessible, approachable and fun to enjoy with friends and family, but executed by our chefs with true fine-dining prowess and precision.
To start, guests can awaken their tastebuds with Grass-Fed Lamb Croquetas ($18++), made from Slow-Braised Lamb Shoulder, hand-formed, breaded and fried with a crisp, golden 2 exterior and served with savoury Piquillo Gel. Guests can also enjoy other house-made Chefs’ Sharing Selections, like Chef Rémy’s Pâté en Croûte ($28++) made from Veal, Pork, Chicken and Foie Gras, Black Truffle and encased in pastry and served with pickles, freshly-baked sourdough bread and vibrant lightly-dressed mixed salad.
The flavour-packed Pissaladière ($24++) is an ode to the European Mediterranean; a fluffy, herbed Provençal bread topped with anchovies, taggiasca olives and onion chutney for a touch of sweetness. Show-stopping cold Sharing Platters like the Cold Cuts & Cheese Platter ($88++) and Riviera Platter ($88++) ensure that there is something to enjoy for every palate at the table! Colourful and vibrant, the Riviera Platter showcases half a dozen freshly-shucked Fine de Claire Oysters, Smoked Cod Roe Tarama with Housemade Potato Blinis, Dorade Royal Tartar with Ginger Dressing and stunning ruby-hued Beetroot-Cured Scottish Salmon.
Chéf Rémy’s Franco-Italian heritage combined with his experience working in ethnically diverse cities of Paris, Doha, Singapore and lastly Marrakech, Morocco, where he worked at the awardwinning five-star palace-hotel, La Mamounia, lends to the diverse flavours of the Main Courses for Sharing. Inspired by his time in Morocco is the star dish Tajines Makfoul ($48++ for 2 persons / $78++ for four persons) – his take on an authentic Moroccan Slow-Cooked Grass-Fed Lamb Shank tajine, served with silky Lamb Jus-coated Barley with Almonds and freshly-baked Moroccan Batbout Bread.
From the European Mediterranean, we have the Greek Dorade Royale en Papillote ($58++) – the freshest sea bream prepared with Mediterranean Chermoula, Taggiasca Olives, Fresh Chili, Preserved Lemon and Ratte Potato, steamed to perfection in a parcel, which is lovingly and delicately opened at the table when served, releasing incredible aromas from all the vibrant ingredients. Executive Pastry Chef Nicolas lends his experience in working in world-class kitchens in Paris, London and Singapore to the table with his Sweets, showcasing his unparalleled talent for pairing unique flavours with playful, colourful presentation.
The Mon Choux ($18++) features the perfect blend of savoury and sweet, with Choux Puffs filled with Salted Caramel Ice Cream, Glenfiddich 15YO Whisky, and Cubebe Pepper-infused Dark Chocolate Sauce. The Piña Colada 3 Cheesecake ($18++) boasts bright, summery flavours, reminiscent of holidays along the French Riviera, but made supremely elegant with Light Coconut Mousse, Vanilla Crunchy Sablé Dough and Fresh Chamomile-Infused Pineapple.
Lastly, a selection of house-made Riviera Macarons ($15++) – Rose Ganache and Hibiscus Gel; Salted Butter Caramel; and Amalfi Lemon with Basil – the perfect flavour hit and sweet note to end your meal with! While The Lounge at Riviera offers guests an all-new way to discover the Mediterranean through their palate, Chef Rémy and Chef Nicolas continue to show their fine-dining chops at Riviera The Restaurant, which exclusively serves menus of Riviera Signatures – from the 4-course Gourmet Lunch Experience ($128++), to the 5-course and 7-course Gourmet Dinner Experiences ($158++ and $198++ respectively).
With the evolution of Riviera to now include both The Lounge at Riviera and Riviera The Restaurant, guests are now able to take a gourmand’s tour of the diverse region of the Mediterranean in all-new ways, based on their own preference, to suit any occasion – whether it be a productive business lunch, relaxed get-together with family and friends, or a birthday and anniversary.
