Taking diners on an insider's excursion to a far off land through a sensory experience of Spanish food and decor steeped in history, KULTO has arrived in Singapore for your dining pleasure.
Loosely translated as devotion and paying homage, KULTO was chosen as the name of the restaurant to show respect and love for Spanish cuisine through genuine food preparation and service.
The beautifully restored space is lined with wooden shutters and completed with clean and neutral colours featuring accents of wood. Visiting KULTO is not unlike a visit to an Italian Chef’s house offering utmost hospitality and warmth. Nestled on the front-row seats, diners get up close to watch the chefs work their magic in the open kitchen.
Born and bred in Rioja, Spain, Chef-Owner José Alonso helms the kitchen bringing a decade worth of experience working with Spanish cuisine and acclaimed International chefs. Each dish reflects great nuance and showcases Alonso’s depth of experience and knowledge in Spanish Cuisine.
Inspired by his own heritage, culture and his own philosophy of letting good quality produce speak for themselves, every plate steers close to the traditional rendition of the dish and lets the freshness of seasonal produce take centre-stage.
A wide range of classic Paellas like Seafood and Squid Ink are included in the menu. Diners can watch Chefs cooking Paellas from scratch through the open kitchen. Each Paella starts with bomba rice cooked in a sofrito base, then basted in a master broth consisting of robust flavours from house made Chicken or Lobster stock. If you’re feeling adventurous, try the Fideuà - another option not commonly seen in Spanish restaurants in Singapore, where pasta is used instead of Bomba rice.
Not to be excluded in any Spanish menu, the classic Croquettes are an essential in the Tapas Menu. An exciting take on Singapore’s heritage dish, the Chili Crab Croquette is a bite-sized pocket of flavour explosion, featuring chunks of fresh crab meat bound by béchamel sauce, paired with house special chilli sauce, then coated in breadcrumbs and fried with precision for that perfect crisp outer layer and oozy soft centre.
The Josper Grill, known for lending a smoky charcoal flavour to food plays an important part - where sweetness of Seafood is juxtaposed with the slightly bitter char from the flames. Taste the best of land and sea with the Octopus, Roasted Pork Belly with Paprika.
The Roasted Pork Bellyseasoned with thyme and paprika is melt-in-your-mouth tender is set beside Octopus that has been sous vide for 2.5 hrs at 85 degrees to ensure the tenderness with right amount of bite, then finished in the Josper Grill for its signature char. To make it all come together, they are paired with a house special Romesco Sauce made with blended roasted red peppers, roasted tomatoes, roasted garlic and roasted hazelnuts.
End the meal on a high with a basque burnt cheesecake - the dessert that took Singapore by storm in 2020. The Cheesecake is Chef Jose’s personal take on the dessert, where Manchego cheese known for its intense, zesty taste is used instead of Blue Cheese. This cheesecake is baked fresh daily, promising a bold yet refreshing treat with a molten centre.
Their are also a multitude of vegetarian-friendly dishes available. Vegetarians can start with the flame-kissed Roasted Cauliflower served with Tahini, Hazelnuts and Chili - a dish so hearty and flavourful that will satisfy even the pickiest eaters, or indulge in a colourful plate of Vegetable Paella.
KULTO is the first Spanish restaurant in Singapore to offer Red Sangria on Tap, Sparkling Sangria by the Jug, and Spanish Boutique Wines directly from Spain, with selected few from Alonso’s Vineyard.
