My recent lunch at Altro Zafferano proved once again why this long-established Italian restaurant remains a crown jewel in Singapore's competitive dining scene.
Perched high above the bustling CBD, Altro Zafferano offers what is arguably the most mesmerizing vista of any dining establishment on the island. Floor-to-ceiling windows frame a postcard-perfect tableau of Marina Bay's glittering waters and Singapore's iconic skyline – a feast for the eyes that perfectly complements the culinary journey that awaits.
I rarely dedicate words to bread service, but Altro Zafferano's focaccia demands special attention. The Pomodoro e Basilico, adorned with vibrant, garden-fresh tomatoes, and the indulgent Tartufo e Mascarpone – a heavenly marriage of earthy truffles and creamy mascarpone – were not merely preludes but standalone masterpieces that set the tone for our gastronomic adventure.
Our starter selection showcased the kitchen's commitment to authentic Italian techniques and premium ingredients. The Vitello Tonnato e Carciofi presented delicate slices of slow-roasted veal carpaccio, perfectly enhanced by a silky tuna sauce and tender marinated artichokes. Meanwhile, the Insalata di Polpo e Patate delivered Mediterranean octopus so fresh it practically whispered tales of the sea, harmoniously combined with sweet cherry tomatoes, hearty potatoes, and briny olives.
The culinary team's creativity shone through in the Seppie e Piselli – charcoal-baked baby cuttlefish that offered a beautiful smoky depth, brightened by vibrant green peas and a fragrant herb salad. Completing our antipasti experience was the Carpaccio di Manzo, Pecorino e Senape, where paper-thin beef carpaccio provided the perfect canvas for peppery arugula, sharp pecorino, and a whole grain mustard dressing that tied everything together with sophisticated flair.
The pasta course elevated familiar classics to new heights. The Spaghetti alle Vongole e Bottarga Armatore – a personal favourite – arrived with perfectly al dente strands coated in a light yet intensely flavored sauce, studded with juicy clams and crowned with luxurious tuna bottarga that added a complex umami dimension. Equally impressive was the Fusilloni con Ragu alla Genovese, where artisanal fusilloni captured every nuance of a slow-simmered wagyu beef cheek and white onion ragout – comfort food executed with Michelin-worthy precision.
Our main courses continued the parade of excellence. The Branzino all'Acqua Pazza featured a whole Mediterranean seabass baked to flaky perfection, enhanced by mini San Marzano tomatoes and delicate Vermentino wine. The Agnello alle Spezie e Salsa Allo Yogurt showcased spice-marinated Pyrenees lamb chops cooked to rose-hued tenderness, complemented by a cooling yogurt and herb sauce that balanced the rich meat beautifully.
Even after such abundance, dessert proved irresistible. Their classic Tiramisu arrived in a portion generous enough for two, delivering that perfect balance of coffee-soaked savoiardi, velvety mascarpone, and subtle cocoa bitterness. The Pasticciotto Pugliese offered a delightful regional specialty – a warm Italian curd tart studded with Fabbri's famed Amarena cherries that provided sweet-tart contrast in each bite.
