Welcoming Flourcrafts Pâtisserie, the Fifth in Baker X’s Line-Up of Home-Based Bakers

Flourcrafts Pâtisserie (@flourcrafts) is the fifth in a diverse line-up of homebased bakers in residence at Baker X. From Wednesday 9 March to Sunday 3 April 2022 (closed on Mondays), Baker X welcomes Flourcrafts Pâtisserie and their array of French confections.

Baker X was launched by Far East Organization in December 2021 with the aim of supporting bakers who wish to explore scaling up into full-fledged outlets. The initiative provides them a business opportunity, at no cost, with a fully fitted baking studio and 10-seat café operated in tandem with social enterprise, Foreword Coffee Roasters.

Look forward to Founder and Baker Xavier Lee well-loved Canelés including the Signature Vanilla Rum ($4 each), as well as special flavours of the week ($5 each) that will be offered on rotation, such as the Mont Blanc, Baileys Rocher, Earl Grey and Taro. Take a sweet bite of Flourcrafts Pâtisserie’s egg-free tiramisus with the Classic Tiramisu with Kahlua ($12). For something different, choose a Matcha-misu ($9.50) from the TEAramisu tea series, or the Yuzu-misu ($9.50), a creation made exclusively for Baker X.

In addition, enjoy crowd-pleasing quintessential French confections like the Madeleines ($3 each) in flavours of Vanilla Lemon and French Early Grey, and Vanilla Browned Butter Financiers ($3 each). Take home Cookies ($10 for a 100g Baker X-exclusive size, $24 for 250g) in delectable flavours of Sea Salt Fudge, Maple Pecan, and Longan Red Date.

I found a delightful spot in Orchard Central called Baker X. Baker X was launched by Far East Organization in December 2021 and features home-based bakers in residency to share their talents and tasty treats. The current baker-in-residence is Xavier Lee of FlourcraftsPâtisserie.  

Xavier’s specialty is canelés. My guests and I were able to try five different canelés.  The flavours are French Earl Grey, Mont Blanc with chestnut crème, Bailey’s Rocher, Taro and the signature dark rum and vanilla bean. I’d never had a canelé before Baker X. It is a small French pastry flavored with rum and vanilla with a soft, tender custard center and a dark, thick, caramelized crust. It takes the shape of a small, striated cylinder and is a specialty of the Bordeux region of France.  They are little works of art. My personal favorite was the taro canelé.  It was the perfect mix of savory and sweet, crispy, and soft, chewy and melty. The canelés are beautifully presented by Flourcrafts. After you enjoy them yourself, I’d recommend grabbing a presentation box of five for a gift as they last for up to a month when stored properly.  

What makes Baker X such a unique experience is you get to interact with the baker directly and try their new creations right on the spot. Far East Organization has made this space available for home-based bakers to try their hand at running their baking business with a professional set up at no cost to the baker. It’s a wonderful way to support the entrepreneurial spirit of budding bakers. The community spirit and support on display are just what is needed at a challenging time. We can all support our local restaurants, bakers and artisans. Xavier Lee and Flourcrafts will be in residence through April 3rd. You can pop in and enjoy some time at the funky industrial space or pre-order online for self-pickup. Flourcrafts also offers a variety of cookies, madeleines, and original takes on tiramisu.
