A Spanish influenced menu at Mercado Sydney

A Chic spot for chef-driven Mediterranean & Spanish sharing dishes from tiered set menus with wines. A share-style menu inspired by the Mediterranean with a particular focus on Spanish cuisine.

Mercado is about the revival of the old mixed with the new. The passion in food derives directly from a love of reviving forgotten kitchen skills.

Through whole animal butchery, meat curing, cheese making, bread baking & preserving. Mercado aim's to continue these traditions by hand with a great respect to the way cooking was and how they can use each method in the modern kitchen. 

The staff in Mercado work with many small farmers, growers and producers to source the finest ingredients. Located in Sydney’s CBD and housed in the historic 350 George Street building, Mercado is at the gateway of the city’s bustling and beautiful European-style Angel Place.

The Spanish/Moorish influenced menu is designed to share and is complemented by the Spanish-wine list. You can start with a cecina (a smoked cured beef) with wood-fired beetroot and garrotxa (a Catalonian goat’s cheese).

The cured meats, and some of the cheeses, are part of a share-plate menu. Snacks could include tartlets of Ortiz anchovies and roasted bull-horn peppers, and plates of jamon-style cured kingfish with crème fraiche and horseradish.

At our restaurant we specialise in dry ageing which is the process where large cuts of beef are aged for anywhere from several weeks to several months before being trimmed and cut into steaks. It's a process that not only helps the steak develop flavor, but also makes it far more tender than it would be completely fresh.
