Duckland, London Fat Duck and TungLok Peking Duck will be spotlighting popular and creative renditions of Irish duck dishes from Silver Hill Duck, touted as one of the best premium duck producers in the world.

The month-long promotion, titled “Delectable Irish Ducks”, is presented by Bord Bia (The Irish Food Board), the Irish government agency promoting food, drink and horticultural exports from the Republic of Ireland.

Since 1962, Silver Hill Duck has been breeding ducks while remaining true to time-honoured farming practices that epitomises integrity in sustainable and responsible farming. The Ireland-based farm’s distinctive hybrid duck – an award-winning breed that is exclusive to Silver Hill Duck – is the secret to its success.

Duckland - Roast Irish Duck

A unique and cultivated hybrid of the Peking and Aylesbury Duck that is specially bred for its high fat-to-meat ratio and porous skin, these meatier birds are perfect for roasting as they have the right amount of fat to keep the meat tender and flavourful during the cooking process. The quality of the ducks is so succulent, tender, full of flavour and consistent in quality that it is often referred to as “The Wagyu of Ducks”, because like the well-marbled Japanese beef, the birds have a high fat content and melts easily in the mouth.

Duckland

Participating restaurants and their featured dishes include Duckland born out of a ‘farm to fork’ concept that emphasises on serving robust dishes using fresh and premium ducks from Silver Hill Duck. As part of the promotion, Duckland will be spotlighting their signature Roast Irish Duck (Paya Lebar Quarter - Whole Duck $68++ / Half Duck $35++; Resorts World Sentosa – Whole Duck $70++ / Half Duck $38++), served with raspberry sauce, calamansi chili and yellow mustard; Duck Confit & Waffle ($21.50++), a whole duck leg and golden-brown waffle served with poached egg; and Wagyu Duck Donburi, featuring Irish duck nestled on a bed of aromatic steamed duck rice, served with seasonal and preserved vegetables, and topped with seaweed, sesame, onsen egg and a housemade Japanese-style teriyaki sauce ($16.80++).

London Fat Duck - Delectable Irish Duck 960

London Fat Duck is a Hong Kong-style restaurant serving roast ducks that marry the premium quality of Silver Hill Duck, with Chef's secret duck roasting technique and heritage recipe. As part of “Delectable Irish Ducks”, the restaurant will be spotlighting their Signature London Roast Duck (Whole Duck $68.80++ / Half Duck $35.80++ / Quarter Duck $18.80++) XO Duck Bak Kwa Fried Rice ($15.80++) and Signature Black Pepper London Duck Bun ($3.20++ per piece, minimum two pieces).

TungLok Peking Duck​​​​​​​

TungLok Peking Duck offers an impressive spread of premium Chinese cuisine reinterpreted for the modern era. Renowned for its commitment to authentic Chinese cuisine through innovative cooking and presentation methods, the restaurant is proud to be the first in Singapore to serve the famed Irish duck from Silver Hill Duck in traditional Peking style.

The restaurant will be featuring the TungLok Peking Irish Duck (Whole Duck $98++) and  Roast Irish Duck (Whole Duck $80++ / Half Duck $45++) as part of the “Delectable Irish Ducks” promotion. The Peking Irish Duck comes with the restaurant’s specially designed Eight Treasures Box, which features a variety of condiments such as the unique popping rock candy, homemade mustard, blueberry sauce, and more.
