After eight years of redefining the steakhouse experience, Fat Belly has confidently entered the next chapter with a new appearance and a carefully curated menu. Nestled in Bukit Timah's Serene Centre, the much-loved dining place has reopened with a decor that exudes warmth and intimacy while still celebrating robust, flavour-driven food.

The relaunch features a newly rebuilt space with natural wood tones, gentle lighting, and clear architectural lines to create a cocoon of relaxation. The restaurant's culinary concept is sophisticated, familiar, and genuinely fulfilling, and its contemporary yet inviting décor reflects this.

Co-founder Andryl Foo describes the relaunch as both timely and intentional. “Our building’s undergoing a facelift, so we thought, why not us too? Turning eight felt like the right moment to reintroduce ourselves with intention. The goal is simple: create a space that feels like home, and a menu that reflects what we do best.”

Denver

The cuisine exemplifies Fat Belly's specific style: rare cuts of beef carefully prepared to accentuate their unique character. Guests can choose between the beautifully marbled Full Blood Wagyu Denver MS-8/9 and the succulent USDA Prime Hanging Tender from Harris Ranch. The Angus Reserve Flat Iron is exceptionally tender at an affordable price, but the Full Blood Wagyu Rump Cap MS 9+ has deep, strong tastes for the adventurous palette.

Classic favourites have also made a welcome comeback. The Sanchoku Wagyu Burger, topped with caramelised onion and pickled cucumber, continues to be a hit, while the new Karana Jackfruit Patty Melt, a spicy, cheesy, and tomato-slicked vegetarian creation, demonstrates that comfort food can be both tasty and plant-based.

Smoked Burratina

Starters include Smoked Burratina served with heirloom tomatoes and balsamic crème, as well as a delicate Blue Swimmer Crab Cake with hand-chopped tartare sauce. The sides are equally remarkable, ranging from fried Brussels sprouts glazed with garum caramel and savoury granola to charred gem lettuce dressed in anchovy vinaigrette and topped with crispy ham. The popular Creamed Scots Kale has also reappeared, this time supplemented with brown buttered almonds, a throwback to Fat Belly's early menu.

To end on a sweet note, desserts combine indulgence and refinement. Highlights include the Signature Tiramisu, the luscious Hokkaido Chocolate Gateau, and a refreshing Savarin with mango gelée and almond crumble.

Nestled in Bukit Timah's Serene Centre, this casual steakhouse delivers an experience that feels both intimate and unpretentious, exactly what discerning diners crave without the stuffiness.

The space immediately puts you at ease. Open and inviting, the counter-top seating offers front-row views into the open kitchen, where flames dance across the grill, transforming premium cuts into smoky perfection. There's an honest transparency here—no hidden corners, no pretence, just skilled chefs working their magic over open fire.

We began our evening with the Raclette Cheese, an indulgent starter that sets the tone for what's to come. Rich, melted cheese crowned with flavoursome sun-dried cherry tomatoes—it's the kind of dish that demands to be savoured slowly, each bite a celebration of simple ingredients elevated through thoughtful preparation. Fair warning: it's filling enough to share, though you might not want to.

The mains, however, are where Fat Belly truly shines. We opted for two expertly grilled Wagyu cuts: the Full Blood Wagyu MBS 8/9 Denver and the Full Blood Wagyu MBS 9+ Rump Cap. Extraordinary doesn't quite capture it. These steaks, cooked to absolute perfection, showcased the kind of marbling and tenderness that typically commands eye-watering prices elsewhere. The Denver cut offered buttery richness, while the Rump Cap delivered robust, deep flavours that lingered beautifully on the palate.

Here's what's genuinely remarkable: the most expensive Wagyu on Fat Belly's menu rings in at just $65. Other premium steaks start from $28. In Singapore's notoriously pricey dining landscape, these figures are nothing short of revolutionary. This isn't about cutting corners—it's about a philosophy that prioritises accessibility without sacrificing excellence.

The accompaniments deserve equal praise. Brussels sprouts arrive transformed, elevated by fried garum and savoury granola that adds unexpected textural contrast. The pomme puree, enriched with extra virgin olive oil, strikes that perfect balance between indulgent and refined—creamy without being heavy, flavourful without overwhelming the star attractions.

By dessert, we were admittedly approaching capacity, yet the Signature Tiramisu proved impossible to resist. Exceptionally light and creamy, it provided the perfect counterpoint to the meal's richness, a sweet finale that felt necessary rather than excessive.

Fat Belly genuinely lives up to its reputation as Bukit Timah's best casual steakhouse. The combination of premium ingredients, expert preparation, and neighbourhood-friendly pricing creates something increasingly rare in Singapore's F&B scene: exceptional value that doesn't require compromise. Whether you're a Bukit Timah local or willing to make the journey, this cosy establishment offers an experience that challenges everything you thought you knew about what a quality steakhouse dinner should cost.
