Amongst the host of alluring choices are comforting classic brunch favourites that diners know and love, from the Classic Beef Wellington with black truffle sauce to Maine Lobster Thermidor with brandy cream sauce.

Enjoy a wide variety of succulent seafood like tiger prawns, snow crabs and scallops, including three types of unlimited freshly shucked oysters – Canadian, Irish and Fine de Claire. Specially for brunch, diners can look forward to one of the city’s largest cheese offerings available on a hotel buffet, with 32 types of cheeses including soft, hard, and blue from Janier, an acclaimed five-generation French purveyor of fine cheese. On display is a variety of premium cheeses like 16-month Comté, Tomme de Savoie Fermière, Roquefort, and Bleu d'Auvergne.

From the cold cut section, feast on an array of the finest cuts of smoked and cured fishes and charcuterie, like salmon gravlax, smoked snowfish, prosciutto di Parma, Iberico ham, and a mouth-watering 25kg Mortadella ham that will be sliced à la minute.

Ever so curious about the Singapore Hilton’s new all-day dining restaurant, I visited Estate for their newly-launched Grand Sunday Champagne Brunch Buffet.

Estate? I wondered about the name. Located exactly where plantations used to be, it gave a feeling of colonial day splendour. Each room decorated with unique art pieces that depicted spices of nutmeg, black pepper and more.

The buffet was set out oh-so-differently to the stock standard full-on ones of the past. This meandered from one room to another. I loved the intrigue of not knowing what was ahead, though I smelt some Indian food wafting its strong flavours through the cooked food section.   

A thoroughly amazing buffet, I was there for a champagne brunch, all set to dig in with good friends and a grand birthday celebration. Estate designed to have intimate spaces has been created in many small rooms that give diners an opportunity to feel they are indeed in a stylish restaurant.

Each dining space able to accommodate about 30 pax. This to me, was a perfect plan for a small group get together especially with free-flow champagne, wine, beer, Bloody Mary’s and any cocktail that you fancy. Great company and conversation plus the amazing array of classic brunch time favourites made with premium ingredients.

Estate, a 345 seater restaurant got me started with a dart to the cold seafood perched on ice. Three types of oysters – Irish, Canadian, Fine de Clair, boiled tiger prawns, clams, black mussels, scallops, Yabbies and snow crab, . Wow what a feast!  A bit of tabasco to complement the cold fare.

My preference for cold seafood where the true taste reveals itself, I ventured to pick up some charcuterie – so much to choose from I settled for some spicy Spanish chorizo, Prosciutto di Parma and Iberico ham. There were seafood cold cuts too.  

My take on buffets is strategic. Opt for favourites as it’s impossible to get through everything. The salad bar looked good. They were in small jars prepared – easy and a good complement to the cold seafood in hand, I sauntered back to the table. Enough for round one. More champagne and conversation before round two.

Friends at the table had a different strategy. One went for the Beef Wellington first. It looked so good he couldn’t resist it. I had my eye on the Foie Gras served in tiny bowls, cereal prawns, black pepper crab and Popiah made with soft-shell crab. Everything was scrumptious.

I noticed a special buffet for kids – chicken nuggets and the like plus a play area where children could do art and play games, as they too enjoyed the day’s outing. This should put those with younger children, at ease. Estate is indeed a playground for all, a typical relaxed Sunday afternoon from noon to 3pm.

We were surrounded by full tables of people enjoying the afternoon, laughter filling the air. A couple beside us were celebrating their wedding anniversary. They were in the mood for a drink or two I’d say. Cheery and friendly we made friends and exchanged views on what was best in case either had not tried them.

Being at Estate reminded me of growing up days when Sunday was a marked-up day in the calendar for family fun and meals around great conversations. The stylish setting was once again on my radar. Black and white tiles against wood accents. That Colonial touch which warms our hearts as we are transported to childhood days.

I must say the way the buffet station was demarcated by residential kitchens to give the feel of home, was fantastic. Steamed delights and noodles was one that would warm the hearts of many who head for dim sum on the weekend. Separated by a bakery corner filled with more than 20 cheese varieties, a golden corner for cheese lovers! Design your own salad and desserts that would whet the appetite of many including cotton candy and ice cream.

Then to the Asian residential kitchen where a must-try Signature Black Truffle Roasted Duck started the cooked treats row. Chinese, Indian and Malaysian food that made my eyes bigger than my tummy. I had a mere try of two dishes.

The Western residential kitchen was most alluring – with the king Lobster Thermidore gleaming at me. So juicy and perfectly cooked, these were being made as they were taken off the buffet by patrons. I liked that this was not placed on the buffet for long. Big tick.

A beautiful prime rib was my go to. A few rare slices with mustard and a Beef Wellington which I had to sadly walk past, was the rave of others at the table. There was a pork roast with stuffing and a salmon bake too. All too much though tempting.

As the afternoon wore on Chef de Cuisine Raj came by to check on guests. With more details of food we had devoured and compliments going his way, we had but a second visitor – a magician. I have to say he was really good. Perhaps if we hadn’t consumed so much alcohol we might have picked up some tricks but alas Darren got the better of us.

I noticed diners having a ball at the DIY cocktail bar. A great idea that would appeal to people who are specific about their cocktails. With so much on offer, Estate offered an exquisite Champagne Brunch afternoon of free-flow Laurent-Perrier, White & Red Wine & a DIY Cocktail Bar where adults pay S$188++ and kids aged between 6 and 12 pay  S$79++.
