Discover Aharā, Where Indian Cuisine Finds Its Essence

Aharā, named after the Sanskrit word used in ancient Ayurvedic philosophy to define food as the source of all well-being, is more than just a restaurant, but an experience. This 30-seater restaurant, which opened in November 2023, provides intimacy without pretence or formality in the historic district's dining enclave on Keong Saik Road. Vikramjit Roy, one of India's best Asian cuisine chefs, has spearheaded the restaurant's new à la carte menu, which features creative variations on traditional street foods and beloved classics, as well as an exciting introduction to lesser-known Indian subcontinent delicacies.

Chef Vikramjit Roy, 43, is widely regarded as one of India's culinary trailblazers, having advanced progressive Asian cuisine across the subcontinent. With more than two decades of experience, he has worked with the country's leading luxury hotel groups, including The Oberoi Group, Taj Hotels, and ITC Hotels. He also created and managed notable restaurants for ITC Hotels, including Pan Asian in Chennai and Tian in New Delhi.

His international experience includes five years in Japan as Masaharu Morimoto's protégé, as well as stints in Heston Blumenthal's R&D team and Hong Kong's three-Michelin-starred Bo Innovation.​​​​​​​

At Aharā, he has created a contemporary menu that celebrates the diversity of India’s gastronomic cultures. The end effect is a sumptuous, unassuming encounter with overlapping regionalities that combine the history of many lifetimes. Aharā is a culinary tour through India, featuring puchkas in Kolkata, vada pav in Mumbai, appams in Kerala, and sarson ka saag in Punjab.
