Award-winning Stellar Restaurant extends Dining to Iconic Rooftop

1-Altitude introduces sky-high dining, taken to the next level – literally.  Home to the highest Alfresco bar in the world, 1-Altitude now brings award-winning Stellar at 1-Altitude restaurant to its iconic rooftop location, whilst the 1-Altitude Gastro Lounge offers a more relaxed casual dining alternative.

Exclusive to Stellar a cut of ibérico, the 5J pork pluma in “A Saucy Pig”, chargrilled heavily on the outside and served medium rare on carrot gel, with caramelised yogurt, allium puree, and finished off with red wine jus, pickled beetroot and shallot crumbs for texture.

Award winning Stellar @ 1-Altitude have extended dining to their iconic rooftop! A wonderful venue to visit now, as it contrasts the world below that we are immersed in.

With no cover charge in place, now is the time to ride up that lift to level 62 and feel the space. Breathe in the sense of freedom, as you play with the clouds from this highest vantage point in Singapore.

I was lucky enough to have witnessed a stunning sunset on the night I visited. Like kids, we ran to different corners of the rooftop snapping pictures from a variety of angles. I wanted to remember the view before, during and after sunset for it was quite varied and a feast for the eyes.

When you visit, I would recommend starting the evening with a bubble tea cocktail or a chilled rose. Stellar has an amazing range of fantastic wines that are paired with meals and a charming sommelier who loves to see diners enjoy them.

Chef Isaac of Stellar rocked up to welcome us with first course in hand. I noticed we were going to start with U.S. charred asparagus. Topped with chunks of German smoked eel and a sprinkle of feta, it sat on a Parmesan cream and chives sauc.

Having been to Stellar before, I recalled that Chef Isaac who is a stunner with his creative sauces was still churning out more that I had never tried before. His adventurous and intuitive style gave way to creating sauces that added to the texture and flavor of each dish.

The delightful thing about frequenting award winning restaurants is that chefs also plate their food with amazing presentation, and beauty that meets the eye. Very important to a visual person like me. The purple and yellow petals just added that final touch to this delicious asparagus dish.

Seared Canadian scallops, roast sweet potato, endives, avocado finished with a pesto dressing - very Aussie style to have a mix of everything and it works. Not only could I taste the fresh ingredients, they were also cooked to perfection.

If my Mum had not trained me to eat beef tongue from young, there would be no way I could have had this next dish. It was plated in original form so it was rather easy to guess what it was. Not really for the faint hearted this one but truly yummy!

Chef Isaac at Stellar explained that the beef tongue was slowly brined over 3 days and cooked gently. Served with bone marrow crumbs, vinaigrette, herbs and pistachio oil which had an intense and beautiful flavor.

Dining at Stellar is an experience that envelopes the romantic ambience, stylish setting against a backdrop of the blue sky. So stylish and elegant and made even more remarkable with good company, food and wine.

I made a mental note to frequent more often, even if for a quick drink. It changed my state of mind in an instant, stepping up to the rooftop where lounge sofas decorate one side of the space, reserved for those who come up for a tipple.

Chef Isaac was back with our first main dish – snapper with a sauce pureed from spring onion, chives and roasted garlic. This was my favourite dish as I am partial to leeks. The poached and charred leeks topped with fresh hazelnut butter, Beurre Noisette from France, lent for a sweet and nutty flavor.

Another main of fish was so interesting as the Tasmanian Petuna ocean trout had a generous helping of Cambodian Kampot peppercorn with a chive butter sauce.

If you’ve been to Cambodia you will know that Kampot pepper has a taste and flavor unto itself. In the past when I visited Phnom Penh often, I would make it a point to come home with packs of Kampot pepper and freeze them so they last. Done in any style it adds to the taste of the entire dish in a subtle way.

The king of the night appeared. A Sanchoku F1 Wagyu OP rib from Australia. Truly a mouthful! Cooked in the Josper woodfired oven, it was charred crusty on the outside and grilled to perfection on the inside.

Meat lovers this is a must order at Stellar! Just make sure you have a few people with you to devour the 1 – 1.2kg chunk of meat. Served with lightly pickled baby carrots, thinly sliced Nicola potatoes cooked in goose fat and best of all charred kale dressed with a ginger flower dressing. Divine!
Much to my amazement I finished every morsel of this amazing piece of meat that boasted a bit of fat on the rim. You see, it is important when you plan to visit Stellar, that you have a very light lunch or none at all. I was thankful that I did.

True to Stellar style, the dessert plate in the shape of a plank, was placed gently on the table as there were four treats strategically arranged on it, staring at us.

A typical Aussie Pavlova filled with a lemon verbena, vanilla ice cream and passionfruit coulis – tart flavours that I love at the end of a decadent meal. The chocolate cloud that had chocolate, nuts, parsley and a sponge was smoked under a glass dome. Presentation, presentation, presentation!

The floral infused marshmallow with kaffir lime curd and a coconut flavoured sable pastry wheel which I deconstructed in one touch of my fork must have taken a good amount of time to make. Done with such detailed acuity, this lime and coconut touch was a perfect end to my meal.

I quipped to Chef Isaac that however full I was with main meals, I always had space for a dessert. The sharp, intense flavours of citrus and heavier tones of chocolate, helped to clear the serious, rich, savoury tastes that came before.

Stellar once again was true to form. They produced a fantastic array of delicious food, created by people who undoubtedly are passionate about what they do. I was pleased to experience the consistency of quality, yet again!
