Lantern at The Fullerton Bay Hotel Singapore will unveil its newest offering, the Sunday Barbecue by the Pool, on the last Sunday of each month beginning February 25, 2024. This monthly event aims to mix the hectic city with the laid-back appeal of poolside BBQ events, providing patrons with a one-of-a-kind brunch experience that combines indulgence and relaxation.

Guests can enhance their weekend with the free-flowing Moët Hennessy liquor package, which includes luxury selections including Veuve Clicquot champagne, Whispering Angel rosé, and creative cocktails. The tantalising journey begins with three vibrant salad starters meticulously crafted to tantalise taste buds: Thai-style pomelo, cilantro, and tiger prawn salad; compressed melon, sherry vinegar, and feta cheese salad with fresh mint; and tomato and cucumber salad with caviaroli and fresh basil.

​​​​​​​The culinary voyage continues with a diverse selection of premium seafood and meats, including ocean-fresh king prawns, Norwegian salmon, M7 wagyu striploin, and lamb rack. Each delicacy is masterfully cooked on cherry wood logs, which imparts a delicate, smokey richness to the delectable meal. Creamy mashed potatoes, pomodoro penne, and chargrilled seasonal veggies round out the savoury treats, delivering a beautiful mix of flavours and textures.

The culinary trip concludes with an appealing array of desserts, including potong popsicles and fresh fruit skewers served from rolling trolleys, providing a refreshing finish to the feast. Diners may unwind to the throbbing sounds spun by a resident DJ while taking in the spectacular panoramic views of the Marina Bay skyline, immersing themselves in an Ibiza-style party atmosphere.

When I think of the ideal Sunday session, I think outdoor, water views, a DJ spinning chilled out tunes, lots of bubbles and yummy BBQ fare.  How did the folks at The Lantern, at The Fullerton by the Bay know?  Because this is exactly what the assistant and I were treated to over the last weekend as we sampled the new “Sunday BBQ by the Pool” promotion. Held on the last Sunday of each month, guests feast on a free flow of BBQ treats including M7 Wagyu steaks, stuffed chicken wings, pork spare ribs, sausages, king prawns and salmon.  This is paired with a wide variety of sauces – we are not just talking your average tomato and BBQ, as well as fancy salts.  There is a small selection of salad bites to start and grilled vegetables and mash to accompany your main meal.  Desserts are super fun!  We enjoyed three cute popsicles representing the flavours of summer, think coconut, mango and lychee as well as fresh fruit skewers and a more traditional dessert of potong ice cream.   You can add on free flow alcohol including verve for $98++ which represents super value based on the a la carte drink prices.

The deck by the pool does get very warm so try find a sit under a fan and the dress code is certainly more in line with a BBQ then a brunch.  Worth a look if you a craving some BBQ fare!
