The evening begins with a delectable selection of Canapés perfectly paired with the magnificent Barone Pizzini Brut Franciacorta. This glittering jewel enchants with a floral perfume and refreshing notes of crisp red apples, pears, and lemon zest, laying the groundwork for the culinary delights that will follow.
Begin your culinary journey with the first course: Venison Carpaccio, Girolles Mushrooms, and Pomegranate Vincotto. Delicate venison slices meet earthy girolles mushrooms in this dish, producing a flavorful harmony. Garbole Heletto 2015, when paired with this dish, entices with a delicate combination of wood, vanilla, and fresh berries, improving the culinary experience.
The Pigeon Ravioli, Wine Must Aged Pecorino, Piedmont White Truffle, Venetian Jus follows, revealing layers of rich and powerful flavours within soft pockets of pigeon. Hatteso Amarone Della Valpolicella Riserva 2012 complements the dish with notes of dark cherry, chocolate, and a delicate trace of spice.
The luscious Piemontese Striploin, Delica Pumpkin, Noto Almond, Black Winter Truffle is the evening's crowning treasure, matched with Hurlo 2012. This highly full-bodied wine, aged in new oak barrels for a minimum of 5 years, envelops the palate with traces of vanilla, coffee, chocolate, and liquorice, creating a symphony of flavours that dance over the taste buds.
Finish on a sweet note with Guanaja Chocolate, Tonka Bean and Braulio Liquor Reduction. With undertones of vanilla, coffee, and chocolate, this dessert wine pairs beautifully with Hestremo Recioto Valpolicella 2016.
