67 Pall Mall, the London-born private Members’ wine Club by wine lovers, for wine lovers, has opened in Singapore. Following a multi-million dollar refurbishment, 67 Pall Mall Singapore welcomes Members into the Club’s spectacular 15,000 sq ft Shaw Centre penthouse in the heart of Orchard Road – Singapore’s premier shopping and lifestyle district.​​​​​​​

The grand opening of the Singapore Club is a watershed moment for the food and beverage scene in the region. Set to become a marquee attraction for lovers of fine wine and food across Asia, membership to the Club allows access to a collection of 5,000 wines, of which 1,000 are available by the glass – the biggest and most diverse wine list in Southeast Asia. Not only are the world's finest and rarest wines within reach, but the underlying premise of the Club is to also make wine more affordable. It allows unprecedented access to fine wines that excite, challenge and captivate Members.

Main Bar - Head Sommelier Roberto Duran and Assistant Head Sommelier Zsofi Kiss

Master of Wine Richard Hemming, Head of Wine for Asia has built a world-class, 15-strong sommelier team in Singapore, led by Head Sommelier Roberto Duran. Roberto was part of the opening team of the London Club and had previous stints in Michelin-starred restaurants in Singapore, including Joël Robuchon and Bacchanalia. The decades of wine experience shared among the wine team rivals that of the London Club, and it set to lead the charge in Singapore’s thriving wine scene.

The wine library

The 5,000-label wine list is available on iPads, loaded with critics’ scores, winemakers’ information and tasting notes. In common with the London and Verbier Clubs, all wines in the Club are served in Zalto glasses. Meticulously hand-blown in Austria, Zaltos are designed to bring out the best aromas and nuances in every wine.

With fine wine comes fine food, and 67 Pall Mall Singapore’s kitchen will offer the biggest menu offering among all its Clubs. Led by Head Chef Alex Zhu, who has honed his French and British culinary sensibilities from stints at Marco Pierre White’s The English House, Daniel Boulud’s DB Bistro and Les Amis group’s Au Jardin, the Club offers all-day dining of signature dishes from the London Club as well as Asian-inspired dishes. With attention to the seasonality of quality produce, traditional recipes and modern techniques combine to create the Club’s signature dishes, such as the bang bang burrata – an East meets West harmony of burrata served in a black vinegar dressing with Sichuan peppers, crushed peanuts and dough fritters.

Pan-fried foie gras, veal sweetbread, crumpet

Another decadent signature is the pan-fried foie gras and veal sweetbread, served on a homemade crumpet, pickled onions and dressed in poultry jus. A plethora of grills from the Josper oven are also available, with a choice of three types of steaks – grain-fed, grass-fed and Japanese wagyu. 

The Singapore Club

67 Pall Mall Singapore Clubroom

Formerly the private residence of Tan Sri Dr Runme Shaw, the refurbished Club penthouse spans the entire 27th and 28th floors of Shaw Centre, offering 270-degree views of the Orchard cityscape. The interior evokes a 1920s and 1930s Shanghai art deco feel, peppered with Shaw Foundation memorabilia, paying tribute to the heritage of the location. Among the notable features of the Penthouse are the original 1970s crystal chandeliers that greet Members in the concierge and the main reception.

The Singapore Club​​​​​​​

Every detail and material is meticulously thought out, such as the custom hand-painted and silk hand-embroidered wallpaper featuring birds and flora found in Singapore’s Botanic Gardens. The grandeur of the solid walnut wall panels is accentuated by blue-grey Azul Macaubas marble from Brazil and Breccia Aurora Italian marble flooring.

Bar - front

In the former ballroom now stands the Clubroom and the Restaurant, with a staggering six-metre floor-to-ceiling wine tower. This houses the biggest wine list in Southeast Asia, storing thousands of bottles of the Club’s collection of premium wines, in perfect conditions. Flanked opposite is a whisky wall with a display of 430 bottles, an allusion to the Whisky Bar that lies above.

Breath-taking views overlooking Orchard Road

Also situated on the 27th floor is the event space, with modular walls that are capable of hosting anything from intimate private dining to large receptions to masterclasses. The rooms can host up to 120 people and feature comprehensive AV systems as well as breath-taking views overlooking Orchard Road. Surrounding the entire Club is a rooftop terrace garden adorned with ornamentals and edibles, used in the dishes created by the culinary team.

Naughty Corner

Photos of the Shaw Brothers and a nod to their long respected film legacy accent the walls along the staircase. Up on the 28th floor is the Naughty Corner and Whisky Bar. A tribute to the London Club’s namesake spirits den, the Naughty Corner sits in what was once the Penthouse’s bedroom. Together with the Whisky Bar, this intimate space seats up to 35 guests and sets the scene of a more intimate lounge experience to appreciate fine spirits.

I first learnt about 67 Pall Mall some 2-3 years ago. It was brought to my awareness via a few large panels elegantly emblazoned with “67 Pall Mall” - those panels caught my eye every time I walked through the glass doors of Shaw Centre, along Claymore Drive. 

 

Even though those panels were tucked away by the side of the entrance, they were statuesque and hard to miss. My curiosity led me to do a google search, and that was when I discovered that it was a private wine club that was getting ready to call the building its home. 

 

With a name like 67 Pall Mall, imagery of cigar smoke, fine wine, a relaxing, and private atmosphere immediately danced in my mind. Perhaps this place could be a reason for one to dress up a little more than usual in otherwise casual and humid Singapore, and a chance to feel like one was in London - without having to hop on a flight and subject one’s nasal passages to assault by total strangers.

 

So when the invitation to visit the club arrived a few weeks ago, I agreed without hesitation. 

 

When the elevator doors opened on Level 27 of Shaw Centre, I was immediately greeted by soft warm lighting, pristine marble floors and an air of quiet elegance enveloped by wooden and lightly-patterned paneled walls. 

 

From the ornate, oval-shaped crystal chandelier, to the door handles and the sconces that quietly dotted the passageways, the art-deco flavour was pronounced, yet subtle.

 

 As I signed in with the Guest Relations team, I could not help but notice that the desk was in fact a sculpture in itself, carved out of one gigantic piece of marble. The attention to detail continues all throughout the club - from its long corridors, plush stairwells, right down to the ladies bathroom with gorgeous blue marble floors. It was amazing to be transported to this elegant, West-meets-East world, right in the heart of Orchard Road, yet away from the hustle and bustle. 

 

Once I entered the main dining room, I was immediately greeted with a panoramic view of the city - thanks to dramatic high ceilings that seem to offer the whole of Orchard Road on a silver platter for one’s eyes to feast on. Knowing that this was once the rooftop penthouse of Runme Shaw, the late founder of the Shaw Organisation, one cannot help but imagine what life would have been like to live amidst a view like this. Well, thanks to 67 Pall Mall, one need not imagine anymore - the views are now available for enjoyment by its members and guests, with a fine glass of wine in hand.

 

67 Pall Mall boasts a selection of 5,000 wines, with 1,000 available by the glass. What I really like about it is that they also offer 25 ml pours, for curious non-committal cats like myself to have a taste before committing to a whole glass. As far as I know, 67 Pall Mall has the largest selection of wines in Singapore - coupled with its relationships with winemakers around the world, this does seem like the best place in the country to receive a wine education and taste a wide variety of wines.

 

Now, let’s talk about the food. Helmed by Alex Zhu, ex-Head Chef at Marco Pierre White’s English House restaurant, the menu is a beautiful combination of the West and the East. Think: Sausage rolls served with a side of achar, Burrata with sichuan peppers, sesame and black vinegar dressing, and you tiao, Pan-fried foie gras with veal sweetbread on a crumpet, and wagyu steak, grilled to perfection in their very own josper. 

 

Just when I thought things couldn’t get any better, I was invited to the top floor, cheekily termed as the “naughty corner”. It’s actually a gorgeous whiskey bar reminiscent of a bar one would find in England, with an adjoining room perfect for tête-à-têtes. 

 

With its extensive wine collection, delectable menu, beautifully-designed interiors and sweeping views of the city, 67 Pall Mall is a jewel nestled atop Shaw Centre, perfect for those who want to find respite in the city while imbibing with like minded wine and whiskey aficionados. I definitely enjoyed my experience there, and certainly would recommend that you try it for yourself too.

67 Pall Mall the London-born private members wine club has opened its doors in Singapore. Exciting news for wine connoisseurs!

Located in the penthouse of Shaw House, formerly the residence of Tan Sri Dr Runme Shaw, my heart fluttered as I rode up 27 floors to this exclusive club, that has become talk of the town.

It was a unique offering to wine aficionados and foodies, me included! As the lift door opened I was greeted by a stylish marble reception designed especially for this purpose, surrounded by dark wood. Stairs led up to a corridor that heightened my curiosity even more. So alluring I thought!

Stepping in to the main lounge, the floor to ceiling glass certainly opened a stunning backdrop of skyscrapers in the Orchard vicinity. A stunning space I envisioned as being a large ballroom in the olden days with Shanghainese music playing in the background while some danced and others smoked cigars in a corner. The ambience was second to none. It took me right back to my childhood where we watched movies akin to this.

Coming out of my reverie my attention was drawn to the tall column pillar that sat square in the centre of the room. This glass store cum exhibit housed 2300 bottles of wine. To think that there were that many bottles setting the scene for this wondrous afternoon. With a dumb waiter installed, this motorized robot did the hard work of finding bottles that were ordered by members. How cool!

Settling in at the table I looked around at the awesome landscape. Truly magnificent and so relaxing. I could see myself coming up for a drink and snack on a workday, oozing creativity that would be unleashed from being in these plush surroundings. A glass of chilled champagne was the perfect start to this stylish afternoon.

As the story of founder Grant Ashton was revealed, former banker who loved wine, the story of re-invention and moving towards one’s passion surfaced. Success follows passion and this was a classic example of one. As wine lovers do, Grant bought more than he consumed. Establishing 67 Pall Mall in London with a full members list, he made available the largest collection of wines by the glass and created one of the finest wine lists in the UK.  

Membership at 67 Pall Mall is up for grabs with almost all taken up at $2,500 plus monthly subscriptions. Who could boast 5,000 wines on offer with 1,000 labels available by the glass? With sommeliers and masters of wine on hand to pair meals and unbeatable wine pricing, I could see why many scrambled to be part of this new kid on the block.

Membership also extends to other locations globally and word is that 67 Pall Mall have plans to expand in Asia. To me I saw this as an opportunity to meet like-minded people and enjoy visits from notable winemakers right on my doorstep.

This made me think of our trip to wineries in France as we traipsed around different parts to taste the amazing fare on offer. With 67 Pall Mall opening its doors here, that experience could be replicated many times over. I could do a region a day and still have many more to cover.

Plus a whisky bar for lovers who enjoy a tipple of this fine malty drink. Such an extensive collection to choose from in an intimate setting. It took me back to the days of popping in to whisky bars in Tokyo after dinner, in search of a nightcap, as we braved the cold of winter. Thoroughly heart-warming and food for the soul.

67 Pall Mall also extended some amazing food to us. It was evident there was a fabulous chef churning out dream dishes like home-made sausage roll with pickled vegetables. Bang Bang burrata was unforgettable as it was accompanied with Yiu Tiao (fried dough fritters often eaten for breakfast and available in hawker centres).

Pan-fried foie gras served on veal sweetbread over a crumpet. Genius combinations! With a Josper oven the grain-fed ribeye was juicy and well grilled. All digested so well with a good drop of red wine. A perfect afternoon if you ask me.

As I left this iconic club, I noticed doors that cordoned off rooms for private events. Photos of the Shaw Brothers adorned walls of this calming space. So much legacy surrounding 67 Pall Mall I felt privileged to have visited this rare wonder.

A thought crossed my mind. I wondered if Tan Sri Dr Runme Shaw was smiling down on his art deco penthouse enjoying the fun and laughter exuding this grand heritage space.

As part of the opening festivities, 67 Pall Mall Singapore will host a series of landmark wine events hosted by world-renowned experts. The Expert Series will consist of weekends filled with masterclasses and free-pour brunches starting with Master of Wine and Burgundy expert Jasper Morris from 11 to 13 March 2022; the 'world's most informed and accomplished expert on the wines of Bordeaux' Jane Anson, from 18 to 20 March; and celebrated forerunning wine writer Jancis Robinson MW from 1 to 3 April – each of whom has contributed extensively to shaping the vinous world.

Ultimately, wine is to be enjoyed, not locked away in dark cellars. The opening of 67 Pall Mall heralds a brand new era of wine appreciation in Singapore, with a mission to entice Members to pull the cork and discover, taste and savour a new wine.
