The Concept of “Simplicité” (Simplicity) In Japanese, “simplicité” translates as meaning “simple” or “minimal”. For us, “simplicité” reflects both the origin and the end-point of beauty in (the taste of) food. “Simplicité” is a feminine noun in the French language. In Old French, the meaning of “simplicité” encompasses inherent honesty and sincerity. That meaning can be extended further to describe a sense of candour and clarity, in other words “simplicité” expresses a pure and sincere attitude. It is with this understanding of “simplicité” that I named the restaurant, and the ideal will be held in my heart as I interact with the people, ingredients, and food at the restaurant. My staff and I will work tirelessly to share this meaning of “simplicité” with all those who visit us. Owner-chef: Kaoru Aihara
