The fine folks at UWK use a special variety of  farm raised Ozaki Beef hailing from Miyazaki. A little bit of history: Ozaki beef is a special variety of beef raised in a farm owned by Mr. Muneharu Ozaki. He started his own farm by raising 100 cattle and toiled tirelessly for 30 years to develop his signature beef. Ozaki is famous for adding unconventional ingredients like charcoal and seaweed to the mix to create thin, long and lean cuts of beef which are just as tasty, or probably even more depending on your preference. Some signatures include the ten course Tongue to Tail Ozaki Beef menu which includes primary and secondary cuts of beautifully marbled meat.
