Indulge In The Flavours of Fall at Fat Cow

Japan’s autumn season is well-known as shokuyoku no aki – the season of hearty appetites.

Available till 10 November 2018, experience Head Chef Shigeru Kasajima’s skill and interpretation of the season’s rhythms, with exquisite dishes featuring the best autumnal produce flown in from Japan at $198++.  

Begin the meal with a light and refreshing amuse bouche, Madai, Asari Suimono – a clear soup boiled with sea bream and Japanese clam with a hint of sudachi, a Japanese lime. Following which, enjoy the delicate Mejina Yakishimo and Wagyu Yukke. The seasonal Girella fish is seared, bringing out its natural sweetness. Marinated wagyu beef topped with a Quail egg yolk and a freshwater crab that can only be found during fall complete the dish for a delectable and visually pleasing treat. 

Treat your taste buds to a myriad of fall flavours that the crunchy Uni Norimaki, Eringi and Myoga Tempura brings with sea urchin, king mushrooms and the ginger flower. The unique flavours of the creamy sea urchin, the delicate texture of the mushrooms and the tanginess of the ginger flower form a harmonious trio – a cheerful introduction to the bounty of flavours that is yet to come.

Satisfied yet ready for more, take your time to taste the Aki Sake and Kisetsu Yasai Hobayaki – a delightful and fragrant dish featuring autumn salmon grilled with Hatcho Miso on magnolia leaves specially air flown from Japan. The dish sets the stage for the Binchō-tan Grilled Wagyu Beef. The Miyazaki beef is grilled on white charcoal, a traditional Japanese method, to tender perfection and paired with savoury garlic chips and a soy sauce dip for a crunchy, umami burst of flavours. 

Conclude the meal on a sweet note with Shizuoka Musk Melon, Peach Sorbet. Harvested from Shizuoka, the prefecture that is known for its musk melon, the juicy and delectable melon is paired with a sweet peach sorbet. Very delicious & beautiful Omakase lunch kids loved it too. Especially applause on the pickled chrysanthemums..something different from usual pickled ginger.

Chef Shigeru-san explained on each dish being served and how it should be eaten with etc so as the wait staff, Mark. Everything is fresh & it looked modern as compared to other places that we had Omakase before that served traditional dishes.

Definitely will be back on my next trip back to Sin.
