Sundays are all about family time. Of stories exchanged across the table interspersed with the tinkling sound of laughter. A moment suspended in time, when the weekly grind is far from the mind, and the only thing important are the precious moments spent with those dearest to you. Sunday brunches have a magical quality. They bring families closer. And if the experience is as elevated as the Lobster and Wagyu Champagne Brunch at Hilton Singapore Orchard, it is a special and memorable time indeed.

The newly launched menu is a vibrant celebration every Sunday at Estate, tucked into the elegant Hilton Singapore Orchard hotel. A festive feel accompanies the brunch, with children delighted at all that’s on offer, and parents allowing themselves to be pampered with bottomless pours of Champagne.

We started our brunch at the fresh seafood counter, of course. Succulent lobsters, plump Brittany oysters, and an array of fresh seafood enticed, with freshly sliced sashimi winning my favour. Sashimi is the best way to judge a seafood bar. There are no frills to hide behind, it is all about the quality of the fish. The lobster too, was a delight. Honest in its simplicity, paired with a slice of lime and tartare sauce on the side, if you so wish.

Food counters

But this being a Lobster Brunch, this was only where the spread began. An entire counter serving hot lobster dishes such as Grilled Rock Lobster brushed with aromatic garlic herb butter, a comforting Lobster Omelette, or a hearty and fragrant Nyonya Lobster Laksa, all awaited our attention.

Estate spoils you for choice. There are so many counters, each laden with delicacies that beg to be on your plate, that it is recommended you come with a roaring appetite. You can enjoy refills of champagne or succumb to the charms of the mimosa trolley that rolls by ever so often, entreating you to try one. The charcuterie corner took me back to Barcelona where jamon and chorizo such as this would grace the tables of my favourite tapas bar. The cheese corner, tucked away nonchalantly, boasts such a wide variety that even the snobbiest of connoisseurs would be impressed.

Breads

They’ve thought of everything. For children, comfort food such as popcorn chicken and mac and cheese is a welcome change. And there’s even a live cotton candy corner! What could be more enchanting than that?

If one had to put a finger on it, it is the warmth of the staff at Estate that truly touches you when you dine here. And the in-house magician is an absolute star. Children and adults alike gasp in astonishment as he comes around to your table and performs magic tricks that leave you with wonder.

Meanwhile, mains range across cuisines starting with grilled meats of all kinds. I especially loved the lamb, cooked perfectly and served with a rich jus. The nigiri counter had me go back for seconds, where the chef was torching wagyu live and serving with other options, including made-to-order ceviche. From Chinese to Indian dishes, there was plenty to choose from, ensuring that even the pickiest of eaters would find something in the vast spread that they loved.

Desserts

Desserts ended the meal on a high note. I skipped the live sundae counter and instead chose the highly Instagrammable dessert jars. My favourite? The Lemongrass and Basil dessert, closely followed by the Yuzu and Grape. And a side of matcha ice-cream to counter balance the sweetness made all the difference.
