Since its inception in mid-2024, Big Wine Freaks has quickly established itself as one of Singapore's most interesting dining places. More than just a Champagne and wine bar, this lively establishment provides a communal dining experience centred on ingredient-driven dishes, fresh seafood, and fire-grilled mains.

Guests can expect a dynamic menu that combines European inspirations, Japanese precision, and bold originality, as well as a world-class wine list.

Ingredient-Driven Dining with Global Inspiration

Big Wine Freaks embraces a cuisine philosophy that values taste purity and simplicity. The cuisine is inspired by the best European wine bars, San Sebastián's vibrant food culture, and the art of Japanese omakase. The culinary staff is led by Head Chef Lim Wei Kiat, who has worked at Michelin-starred restaurants like Art di Daniele Sperindio and Mirazur's residency at Mandala Club. Guided by Brand Chef Marat Kalaidzhian, he crafts recipes that highlight fresh ingredients.

Chef Keniyoshi Ryohei leads the raw bar, which serves robust Japanese seafood dishes with a modern twist. Signatures include the Big Wine Freaks Sashimi Set ($158), premium French oysters ($9 each), and renowned Japanese tuna cuts such as Akami, Chutoro, and Otoro sashimi. Unique small bites include gougères with lardo and black truffle, uni toast with tamari and jalapeño, and caviar-topped pirozhki.

Starters range from Alaskan king crab tacos to Parisian tartare, while mains from the Josper Basque Grill include octopus with romesco sauce, beef short rib with confit carrots, and a stunning lamb shoulder for sharing. Seasonal vegetables and mushroom-focused plates balance out the richness, bringing depth to the dining experience.

Wine is at the heart of Big Wine Freaks. The cellar houses over 2,000 bottles across 500 labels, all sourced from artisanal growers committed to sustainable viticulture. Guests can sample Champagnes and Burgundies from rising stars, natural wines from Jura, Beaujolais, and the Loire, as well as unusual vintages from micro-farms throughout Europe.

The rotating wine-by-the-glass menu includes over 40 selections, all presented in luxury glassware from Zalto, Sydonios, and Kimura. Head Sommelier Goh Kher Meng, one of Singapore's only 25 Advanced Sommeliers, directs the programme. With experience at three-Michelin-starred Odette as well as notable restaurants like Restaurant Poise and Le Bon Funk, he and his colleagues walk guests through curated selections while presenting the tales behind the winemakers.

Big Wine Freaks, located in a beautiful colonial-style building in Chinatown, perfectly combines heritage with modern European design. Italian architects Sabrina Bignami and Alessandro Capellaro created a space in which the kitchen blends with the dining area, breaking down customary barriers between chef and guest. Liquid metal tables, artisanal wall finishes, Dedar Milano upholstery, and vintage details create a rich yet elegant look.

Nason, Moretti, and Toso's lighting design elevates the dining experience, while theatrical projections and a stunning pink light installation add drama. Candice Teo's curated music completes the atmosphere, with deep rhythms ranging from afrobeat to organic house, downtempo electronica, and amapiano.
