Papa's, a newcomer to Asia's culinary scene, defies the preconceptions of Indian cuisine and fine dining by providing an elevated and innovative interpretation of its comfortable forms and flavours. Dining at Papa's, located above Veronica's, a neighbourhood sandwich store in Bandra, Mumbai, is reminiscent of an intimate dinner party at Chef Hussain Shahzad's home, evoking a sense of 'excellent, without the fuss'.

With Chef Hussain's vision at the lead, Papa's is positioned to become an exciting innovator on the international culinary scene.

Chef Hussain, a prominent next-generation chef who is revolutionising India's culinary environment, refined his abilities at New York's Eleven Madison Park. He was mentored by the late Chef Floyd Cardoz, who is best known for introducing the United States to modern Indian fine dining.

Chef Hussain returned to his culinary roots under Chef Floyd's supervision and began working as a Sous Chef at the award-winning The Bombay Canteen. Chef Hussain is now the group's Executive Chef, leading its restaurants to numerous accolades over the last decade. Chef Hussain's next performance at Papa's demonstrates a strong commitment to embracing his background while providing a polished and playful portrayal of India's culinary diversity.

Papa's reinvents how India's various flavours can be enhanced, presented, and experienced in fresh and innovative ways. The meal is served tasting menu-style, with Chef Hussain sharing stories about its origins, ingredients, and inspirations. Chef Hussain's fusion style is showcased in dishes such as "What The Duck!" and "The Wellington," which combine international culinary techniques to provide a polished yet whimsical take of familiar tastes.

Papa's transforms traditional fine dining formality into an inviting setting reminiscent of a 1980s-style Mumbai home, capturing the cosy, old-world charm of a Bandra residence. The interiors, designed by Shonan Purie Trehan of Studio Language Architecture, are filled with conversation starters and art-deco artefacts. However, carefully managed lighting and warm wood tones add a Wes Anderson-esque filter to the overall experience.​​​​​​​
