Join Chris Marshall as he goes in for a no-holds-barred discussion with Davide Boncimino, Head Bartender at Madame Fan Bar and Restaurant located at JW Marriott Singapore South Beach.

As a child, Davide, who is Italian–Filipino, regularly travelled to Manila with his family which exposed him to east meets west tastes, cuisines and cultural differences. Little did he know that one day his childhood sojourns would inspire his cocktail creations.

Davide moved to London from Milan in 2013 to follow his passion and learn from amazing bars and bartenders, to study classic cocktails, understand spirits and connect with the art of hospitality.

In 2014 he claimed the UK title win for the first Don Papa rum competition. This opportunity allowed him to start travelling internationally for guest bartending shifts. In 2015 his travels brought him to Asia and, more importantly, Singapore. 

Davide joined the newly opened The Other Room as Bar Manager in 2016 and in the same year competed for one of the most notable global cocktail competitions: Bacardi Legacy, winning the Singapore title and representing the country at the global finals in Berlin the same year.

Since 2018 Davide has been Head Bartender at Madame Fan. Having discussed his upbringing, early career, his hopes and aspirations, I asked Davide what he enjoys most about working in F&B.

"I love the freedom to express my creativity through cocktails. Working on new and inspired recipes while evolving my technique is core to my profession. Understanding liquors, fruits, spices, herbs and the impact these ingredients have on creating a classic or bespoke cocktail for my guests is my promise to them. It’s even better knowing my guests are satisfied while being immersed in the experience I have created. This is my greatest joy, my greatest reward."

Davide believes everything starts from passion. A bartender’s day is long, and the hours are late. “If you don’t love what you do, it will be difficult to enjoy, let alone succeed in your professional life. Your passion drives you to learn more and do it with focus." Davide's advice is to, "be willing to listen and learn from others – at all times." 

Originally from a very small village Biella, Italy, home to less than 3500 people offered Davide little or no opportunity to flourish locally. But he has made up for that since, travelling and working in cities such as Milan, London and Singapore as well as visiting 15 countries to date for guest bartending shifts and conduct cocktail and bartending seminars. These opportunities were not in his wildest dreams as a small boy living in Biella.

"I feel blessed and humbled for everything the F&B industry has given me over the years having enriched me as a person both professionally and personally.”

His parting advice? "Set a goal and aim for it, work hard. In time it will pay off. Never give up on your dreams."
