London comes to Singapore at this one night only cookout featuring creative dishes from Summerlong chefs Justin Hammond and new head chef Fotis Kokoshi alongside London-based chef Ben Spalding and lively music by London’s DJ Gamadon.

Acclaimed London-based chef Ben Spalding founded PuzzleProjectsGroup to offer a fresh take on hospitality consultancy for all sectors. He specialises in curating menus for food and music events (from intimate gatherings to festivals) and handling catering and food production for corporate, public and individual clients globally.

Prior to launching his own successful brand, Ben trained at some of the world’s finest Michelin-starred restaurants including 28+ in Gothenburg, Per Se, Restaurant Gordon Ramsay, The Ledbury, Bagatelle, The Fat Duck, Le Manoir, Vue de Monde, and L'Enclume.

He returned to London in 2011 and delivered his unique style of cooking with great success at restaurants including Roganic, John Salt and Aqua in the Shard, winning both personal and professional acclaim along the way.

His awards include 3 AA Rosettes at Roganic, the Zagat 30 under 30 award, the ShortList Brit List, the Times 100 Most Influential People.

The three chefs will be offering guests a range of Eastern Mediterranean dishes with a twist.

For starters, highlights include Chef Fotis’ Greek Taramasalata ($16++) a creamy dip served with river trout roe, lemon, chives, black sesame, and lavosh; or the refreshing  Crab Tartare ($23++) served with yuzu, yogurt, grain mustard, chives, blood orange.

Must-try Kebabs include  Chef Ben’s Duck Kebab ($27++), flavoured with more than 20 spices and served with puffed wild rice and salad or  Chef Justin’s Pork Belly ($25++) served with lemon pickle, shaved fennel, smoky eggplant tazatziki, pea shoots and puffed pork rind.

For those who want to share or have big appetite,  try Chef Ben’s  Lobster vs. Razor Clam Tacos – Middle Eastern Style!! ($29++) featuring Lobster meat cooked in Lebanese-spiced butter, razor clams cooked in lobster stock, curried finger lime mayonnaise with crispy iceberg lettuce and roasted peanuts.

Meat lovers can go for Chef Fotis’  Short Ribs A La Polita ($28++), tender 36 hours sous-vide beef short ribs accompanied by opinambur puree, grilled artichoke and baby carrots.

To close the evening, the chefs have created two desserts for guests to indulge in: Chef Ben’s CHOCYWOCCYDOOODA!! ($12++) a flaming chocolate tart, and Chef Fotis’ Honey Parfait with Greek doughnuts (12++).

What an awesome atmosphere and ambiance here. The food and drink menu and friendly staff are all fantastic. They've got a casual barefoot vibe, with a chilled attitude and fresh bold flavors. The place is like a beach side cafe, but without the beach, perfectly located along the Singapore River. The menu is based on fresh flavors, everything casual and approachable.
