What makes Plank Sourdough Pizza's taste so good?

It is in their pizza bases which are made with the same long, slow fermentation process as used in the production of their famous Baker & Cook sourdough bread.

We moved to Singapore in 2006 and for the entire time we have lived in the Holland Village environs. Imagine then my surprise to find, nestled in the hinterland between Holland Road and Bukit Timah, a charming micro-cluster of shops and restaurants - including a Baker & Cook and a Plank Sourdough Pizza.

Plank Sourdough Pizza is Dean Brettschneider’s - Baker & Cook’s owner - special little neighbourhood pizza joint. There are two currently in operation - this one at Namly Place and another at Swan Lake in the East Coast. There are two more on the way at Eng Kong Park (Near Beauty World) and Serangoon Gardens.

Brettschneider created the sourdough starter that feeds his entire enterprise more than 20 years ago and, using the same lengthy fermentation process used in the production of their famous Baker & Cook sourdough bread, the Plank Sourdough Pizzas were born.

We leapt right into this sourdough extravaganza: the Plank Crispy Garlic Bread (S$6) is unlike anything else on this food infused island - it is a perfect starter, especially accompanied by the Caprese Salad (S$12.50), with tomatoes that seemed to have been freshly plucked from the vine.

My companion and I shared two half-half pizzas - which I strongly suggest for scoffer parties of no more than four. We were presented on one pizza - all eclectically named - a number 1 (a margarita style pizza with caramelised garlic and basil - S$23) and a number 7 (a vegetarian concoction of mushrooms, truffle oil, onions and mirin - S$26). The other pizza was a 6 (mozzarella and parma ham - S$26) and an 8 (lamb meatballs and buttered leak - S$26). My favourite of the evening was number 6 - as I am really stuck in my ways with pizza. My companion favoured number 7.

The pièce de résistance was then presented - the Cheese Plank Pizza (S$14.50). The sweetness of the maple syrup offset again the blue cheese of the former was mind-blowing. There was also an excellent Banoffee Plank Pizza (S$14.50) that was professionally nailed together.

A Plank Affogato (S$9), with a double shot of the brilliant Allpress coffee espresso, was a perfect finish to a spirited dinner. Brettschneider’s Baker Boy Summer Ale is available by the bottle (S$10.50), as is New Zealand’s Silent Estate Red Wine per bottle (S$48).

Mr Third was fabulous at looking after us all evening and, frankly, this is now my favourite pizza restaurant in District 10.

Plank Sourdough Pizza - Namly, 64 Namly Place, Namly Estate, Bukit Timah Singapore 267208. Reservations are a must at the weekends.
