These people will make a passion out of you. I learn a wide spectrum of things in 1 class from Chef Kel who was very ready to answer to any side queries least related to the class. He took the time, nothing is rushed and no question is too irrelevant. It felt like a private class :) I took home with me several recipes because of his tip, learn with practicality some baking knowledge and get to take home a 6 years old sourdough starter to call my own! Oh and 12 loaves of bread! But Chef William Woo is the cream on the cake. Do not miss this man lol. I went back to the academy the next day to get the sourdough starter I've forgotten, only to meet this Chef who not only took his time to explain how to care for the sourdough starter extensively, he also guided me on an unexpected step by step practical the next day via WhatsApp with pictures and video to assure me that I'm using the right technique to bake a bread using the starter. I was glad to have forgotten the starter. It is because of this precious practical guide that I know confidently that I've learn the skill and I can now make a sourdough bread unsupervised. Big thank you Chef William Woo and thank you Chef Kel for your passionate share!
