Grass-fed Goodness with Australia’s Little Joe Beef at Bedrock Bar & Grill Singapore

Awarded the ‘Best Steak Restaurant’ by Restaurant Association of Singapore in 2019, the homegrown steakhouse Bedrock Bar & Grill (#bedrocksg) presents Australia’s Little Joe Beef in the latest edition of its well-acclaimed World Meat Series (#WorldMeatSeries).

Until Tuesday 31 March 2020, beef connoisseurs can enjoy four dishes, from crowd-pleasers to redefined classics, starring the delectable all-natural grass-fed beef.  

Bedrock Grill
The Little Joe beef offers a minimum marble score of AusMeat 4+, a near-impossible feat as grass-fed beef. The South Australian beef’s name was inspired by the terminology used in the game of Craps, where a ‘Little Joe’ – a dice roll of four achieved by throwing two twos – has an unlikely occurrence of only 3%. With more than 3,000 accredited farmers, the juicy beef is sustainably produced without antibiotics, hormones, and GMO, and the free-range cattle graze on all-natural grass since birth. 
 
Executive Chef Isaac Tan, recognised as the ‘Best Head Chef in Singapore’ by Haute Grandeur Global Excellence Award 2019, shared his inspiration for bringing in Little Joe’s meat. “Bedrock's World Meat Series is a culinary exploration of meat across the globe. It is a way for Singaporeans to experience small farms’ meat, right in the city, " he said.

Bedrock Bar & Grill’s World Meat Series is inspired by culinary travels and the quest to bring the finest meat cuts from all over the world to Singapore. Past editions have featured premium meats such as the Brandt Beef as well as TE MANA LAMBTM. First launched in 2017, each edition is carefully curated by Refinery Concepts’ Executive Chef and Founding Chef of Bedrock Bar & Grill Isaac Tan.  

Four dishes will showcase Little Joe beef. Diners can savour the Sugar Cured Beef ($38++), paired with pickled pumpkin and celery parsley salad or the crowd-pleasing Four Cheese Burger ($48++) with caramelised onion and cucumber pickles. Enjoy the full-flavoured profile of the beef with a classic Steak & Potatoes ($88++), with the potatoes seasoned with rosemary beef fat and a drizzle of shallot sauce.  

Bedrock Grill

A twist on an iconic classic, groups of 2-3 persons can share the Tomahawk Wellington ($258++). The Little Joe steak is baked with truffled mushroom duxelles, foie gras, smoked bacon, and wrapped in a buttery puff pastry. A heirloom tomato salad and beef chilli oil brussels sprouts completes the set. 

With an extensive range of over 45 single malt whiskies from around the world, Bedrock offers a great way to complete your meal.  Diners can experience different whiskies with Bedrock’s specially curated whisky flights, featuring ‘Taste of Scotland’ ($38++/ three 20ml shots), ‘Taste of the  World’ ($58++/ four 20ml shots), ‘Rare & Old Whiskies’ ($68++/ three 20ml shots) and ‘Elements of Jura’ ($158++/ four 20ml shots).
